I guess I find the boys are most believable when they are under some stress, in some dire circumstance. To that end, these are some of my favourite in character Wincest fics:

Trapped in a grotesque parody of domestic bliss with a brother he no longer recognizes, a shell-shocked Dean has no reason to believe that happy endings exist for men like the Winchesters. My thoughts: This very human story of Dean in a post apocalyptic world struggling to look after his shell shocked or potentially permanently gone brother is funny and poignant and sad and happy all by turns. An excellent read.

Please clarify: 'Believable' suggests that you may want stories that inhabit the real world (wherever that is). 'In character' could be true of real world fic OR alternate universe/magical realism. It's an interesting request, but the distinction could provide two different sets of recommendations.
I guess our view on what is "in character" for Sam and Dean in fics strongly depends on the way we see them, so what is "in character" for one reader might not be for another. Anyway, aside from some of the fics others already recced, the following felt really in character for me:

I'll give this a shot - although I've read so far afield in the Supernatural 'verse by now, that I can't be relied on as an objective judge. . . .
Believability is one thing within the familiar confines of the show. But I think their characters and connection are sharpest if the setting is unusual (for them), and the stakes are high. Do they continue to act and react the way we perceive them thru the show? Do we recognize them as authentic, no matter the circumstances? (This is all too subjective!) *mutters*
