I guess I find the boys are most believable when they are under some stress, in some dire circumstance. To that end, these are some of my favourite in character Wincest fics:

Dictionary for a Dead Language - [livejournal.com profile] britomart_is
http://britomart-is.livejournal.com/154955.html
Summary: Under mysterious circumstances bitterly disputed by the historians, Sam Winchester said yes to Lucifer. Three years later, Lucifer is gone and the familiar landscape that the Winchesters once traversed is a burnt-out ruin of its former self — not to mention the damage done to Lucifer's vessel. Trapped in a grotesque parody of domestic bliss with a brother he no longer recognizes, a shell-shocked Dean has no reason to believe that happy endings exist for men like the Winchesters.
My thoughts: This very human story of Dean in a post apocalyptic world struggling to look after his shell shocked or potentially permanently gone brother is funny and poignant and sad and happy all by turns. An excellent read.

Soul-Eater, Death-Dealer by [livejournal.com profile] nynxlynx
http://nynxlynx.livejournal.com/3260.html
Summary: A grieving Dean is pulled into an alternate universe where a much more hardened, cold Sam is working to get his Dean out of hell. Though Dean doesn’t want to go back to his lonely world, he aids Sam in his dark quest, a Sam torn between the brother he’s fighting to save and the one right in front of him.

To The End (Sam/Dean, NC-17)
 - [livejournal.com profile] sometimesophie
http://sometimesophie.livejournal.com/39469.html
Summary: The world is ending, Sam has turned, and Dean stops running.
This story makes me ache so many lovely details of Sam and Deans relationship here at the end of the world.

The Book of Winchester [livejournal.com profile] selecasharp
http://teashopmuses.livejournal.com/57215.html
Summary: After the end of the world happens, Sam and Dean are once again on a roadtrip across the country — with no car, no money, and no civilization. All they know is that hunters and demons alike are after them and the only thing that can help the world: the Book.

There's only so much jealousy a guy can take, and Sam's reached his limit ...
Her boys are always pitch perfect

Dean Reads - albeitslowly now ht-murry on dream width (You may need to be friended to see this page, not sure)
Summary: Sam taught Dean to read, three words at a time, with focus and conviction. From Hell, Dean teaches Sam to listen the same way.

http://ht-murray.dreamwidth.org/429298.html
The story starts about a third of the way down the page.

And a self rec of a story that doesn't have wincest, but it is implied
The Winchester Road [livejournal.com profile] meus_venator
http://meus-venator.livejournal.com/12300.html
Summary: The world has ended. Lucifer and his legions have moved on, their new battlefield heaven. He has left Earth a barren wasteland, he has also left behind the shattered shell that was once his vessel. This is a story of two brothers finding each other again at the end of the world and facing it’s passing together.

A tale of abiding love.

Wonderful list. The only downside to these excellent fics is that I will never have the pleasure of first discovering them again. . . .

I know what you mean. Like watching a movie for the first time. Everything is so crisp. The world in slow-mo detail : )

And for the OP [livejournal.com profile] zeldafan4ever to the point [livejournal.com profile] onlythefireborn brought up as to what in character means, my list are all sort of 'what if' AUs

Yes. The first Suspension of Disbelief is always the finest.

Please clarify: 'Believable' suggests that you may want stories that inhabit the real world (wherever that is). 'In character' could be true of real world fic OR alternate universe/magical realism. It's an interesting request, but the distinction could provide two different sets of recommendations.

I guess our view on what is "in character" for Sam and Dean in fics strongly depends on the way we see them, so what is "in character" for one reader might not be for another. Anyway, aside from some of the fics others already recced, the following felt really in character for me:

Driving Down the Darkness (http://nutkin.livejournal.com/35088.html) by [livejournal.com profile] nutkin

Exact Change (http://documents.mx/documents/exact-change-by-yourperiphery.html) by yourperiphery

Thanks for the clarification. Such a provocative question - everyone's 'believable' recs must be so different. Depends on what you can believe - for instance, six impossible things before breakfast?! :-)

I'll give this a shot - although I've read so far afield in the Supernatural 'verse by now, that I can't be relied on as an objective judge. . . .

Believability is one thing within the familiar confines of the show. But I think their characters and connection are sharpest if the setting is unusual (for them), and the stakes are high. Do they continue to act and react the way we perceive them thru the show? Do we recognize them as authentic, no matter the circumstances? (This is all too subjective!) *mutters*

Try these on:

The Incestuous Courtship of the Antichrist's Bride (fleshflutter)

Sam Winchester and the Terrible, Horrible No-Good Very Bad Day (leonidaslion)

Stranger than Fiction (nyxocity)
http://archiveofourown.org/works/379457/chapters/619888

Candlebeck's Gone Again series - or any of Candlebeck's work, really
http://archiveofourown.org/series/9421

Of course, the touchstone that is gekizetsu's The Last Outpost of All That Is
http://archiveofourown.org/works/1786042

runedgirl's 143 Alice Grim Lane
http://runedgirl.livejournal.com/57767.html

And I really like ygrawn's work, especially her Seven Women and Sam series.
http://ygrawn.livejournal.com/15915.html

Oh, and for retired-after-the-apocalypse Sam and Dean, I like compo67's Chicago'verse
