anactoria always writes amazing Sam in her Dean/Cas stories. I'd particularly recommend Clean Air and 'Til Morning.

Also, check out The Hieroglyphs of Angels by destina. There's just a really small Sam cameo in it, but it's one of the most perfect Sam moments I've found in fanfic.

Umm, I write a lot of Destiel, and although most of them aren't from Sam's perspective specifically, they all have him acting pretty calm and accepting the couple like it was nothing out of the ordinary. The only one I can think of that is written mostly from Sam's perspective (and some from Castiel's) is called "Sting Operation" and can be found on my journal, although the Destiel is mostly at the end.
